For the past few weeks, I’ve been wanting a big, cheesy quesadilla. When I told hubby about my craving he immediately suggested Taco Bell and this time I couldn’t even do it. Just to give you a little background here, I am a reformed Taco Bell junkie. I absolutely love that place but the thought of all the calories I would consume with one chicken quesadilla and meximelt (my standard order) was way too much to bare.
So, I decided that we would make our own and they turned out perfect! Quick and easy too 😉
Ingredients
1 Avocado
2 tbsp butter
4 – 10 inch Tortillas (we used ultragrain)
1lb Boneless Skinless Chicken Breast
1-2 tbsp Sun-dried Tomatoes, chopped
1 cup Cheddar Cheese (we went for fat free)
Season salt, garlic powder, onion powder & black pepper
Directions
* Cube and season the chicken to your liking
* Add to the skillet over med-high heat & cook for about 6 minutes or until golden brown
* Remove the chicken and rinse the skillet
* Add 1/2 tbsp of butter to the skillet over med-high heat
* Once melted, add one tortilla making sure the bottom gets well coated
* Layer chicken, avocado, sun-dried tomatoes & cheese on one side of the tortilla
* Flip the other half of the tortilla over with tongs and pressed down
* Cook for 2-3 minutes on each side until golden brown & crispy
*Remove from skillet
* Repeat steps for each tortilla
* Cut, serve & enjoy!
I, too, am a reformed Taco Bell junkie. Crunchwrap supreme? Yes please. Good thing NYC doesn't have a lot of fast food joints. Looks tasty!
